Citrulline is a non-proteinogenic amino acid that is involved in many important processes in the body. Its natural sources are, among others watermelon and melon. Citrulline is involved, among others in the urea cycle – an important metabolic process during which ammonia produced in the transformation of amino acids is removed from the body. In addition, citrulline is also a product in the synthesis of nitric oxide (NO) in the reaction:
Arginine ➞ NO + citrulline
Interestingly, citrulline can be converted back into arginine, from which NO is produced.
